Convenience(方便) Foods
Instead of buying only fresh foods, Americans nowadays buy many more convenience foods. These are foods which are ready partly or completely prepared. Many of them are frozen, such as frozen dinner, heat-and-serve French fries, and frozen pizzas. There are also many canned convenience foods, such as ready-made spaghetti, soups, stews(炖熟的菜肴), and vegetables.

In the 1960s, a back-to-the-earth movement was started by young people in the United States. The movement was a reaction against the harmful effects of technology. Many people now prefer natural and organic(有机的) foods to the prepared foods sold in health food stores and in food co-ops, which are small stores where customers help manage the store. Every Dec.26,millions of people in Britain, Canada and Australia take an extra 24 hours off after Christmas to celebrate what to most Americans sounds like a made-up holiday.
A few years ago, one of my friends moved to London and I visited her for New Year’s Eve .I flew into Heathrow Airport a few days after Christmas, unable to travel before that as I had to be at work on the 26th
“But that’s Boxing Day,” she said.

“No, It’s British. It’s the holiday the day after Christmas.” She said and explained, as she understood it, of Boxing Day. It had something to do with the day the servants in English society got their gifts and the day off after serving the gentlemen during the Christmas festivities.
Nice idea. Why didn’t it translate to the colonies across the Atlantic?
Some historians believe that Boxing Day was invented to strengthen the English class system, when the middle-and-upper class would give money or goods to the servant class or poor the day after Christmas, expecting nothing in return. The upper class exchanged with each other, as equals, on Christmas proper.
It would have been improper for a lower class person of higher station because it would have implied that they were equals, some historians say. Therefore, Boxing Day.
Other historians say the boxes of food and other goods given by the merchant class to servants and tradesmen were a kind of Christmas tip. The “tips” were packaged in boxes, like Christmas presents.
Another its true origins, historians agree, Boxing Day has nothing to do with our unofficial American Boxing Day rituals of throwing empty gift boxes or covering paper out of the house, or returning unwanted gifts to the department store.

Centuries ago, man discovered that removing water content from food helps to keep it, and that the easiest way to do this is to expose the food to sun and wind.
All foods contain water- cabbage and other leaf vegetables contain as much as 93% water, potatoes and other root vegetables 80%, lean meat 75% and fish anything from 60% to 80% depending on how fatty it is. If this water is removed, the activity of the bacteria which cause food to go bad is checked.
Fruit is sun—dried in Asia Minor, Greece, Spain, and other Mediterranean countries, and also in California, South Africa and Australia. The methods used are different, but in general, the fruit is spread out on trays in drying yards in the hot sun, in order to prevent darkening.
Nowadays most foods are dried by machine. The method of such dehydration(脱水) is to put food in rooms through which hot air is blown at temperatures of about 110℃ at entry to about 43℃ at exit. This is the usual method for dying such things as vegetables , minced meat and fish.
Liquids such as milk, coffee, tea, soups and eggs may be dried by pouring them over a heated horizontal steel cylinder or by spraying them into a room through which a current of hot air passes.
Dried foods take up less room and weigh less than the same food packed in cans or frozen, and they do not need to be stored in special conditions. For these reasons they are invaluable to climbers, explorers and soldiers in battle, who have little storage space. They are also popular with housewives because it takes so little time to cook them. Usually it is just a case of replacing the dried—out moisture with boiling water.
